What two-sided actually means
A flippable mattress is not a gimmick on this line, it is the construction. The firm side and the extra-firm side use different quilting and different foam above the support core, so turning it over changes how much you sink rather than just swapping a worn surface for a fresh one.
It matters most when two people disagree, or when you are not certain how firm you want to go. Start on the firmer face for a few weeks; if it is too much, flip it rather than starting the search again.
